In celebration of UAE National Day, this talk offers an overview of the origins and evolution of Emirati cuisine as an expression of Emirati culture and history. Emirati foodways have grown in tandem with the development of the region within the contexts of trade across the Arabian Peninsula and Indian Ocean regions.
